Doubanjiang or douban is a salty spicy paste made from fermented broad beans, soya beans, rice, and red chillies. It is known as ‘ the soul of Sichuan cuisine ‘. Doubanjiang is stirred into bowls of rice or instant noodles for a quick and easy lunch and is a key flavouring in many Sichuan tofu dishes such as Mapo tofu. The Koreans make a similar paste called doenjang which is used in dishes such as ssambap and bibimbap.
