En papillote

En papillote is the French for ‘ in parchment ‘ it describes a cooking technique where the food is baked in a folded baking paper or aluminium foil parcel. The technique is usually used for cooking vegetables, fish and chicken to which are added herbs, spices and other flavouring ingredients and wine, stock or water to steam the food.

The finished En papillote dish is usually opened at the table to release the incredible aromas and served with the cooing juices.
