Linzer Torte

A Linzer Torte or Linzertorte is a tart made using a rich buttery sable pastry. It is made at Christmas across Austria, Hungary, Switzerland and across the USA. The pastry for the torte is flavoured with almond, cinnamon and lemon zest. Traditionally the pastry case is then filled with black currant or apricot jam or homemade plum butter and topped with a lattice pastry top. The tart is brushed with egg wash and baked. The first recipe for Linzertorte dates back to Austria in 1653. The tart was first mass-produced in the early eighteen hundreds and by 1850 the recipe was being used in America.
